Cherries are a fabulous fruit to include in your diet, they are a great source of nutrients, including iron, magnesium, calcium, vitamins A, C & K & potassium, they are high in dietary fibre, have antioxidant properties and are low in calories!

The cherries in this lovely cherry & mint quinoa salad will provide you with 17.5% of the reference nutrient intake of vitamin C*.
This flavour filled recipe makes a lovely lunch or side dish.
Serves 2
Ingredients:
200g Quinoa
200g Cherries
30g Shelled Pistachios
Large Sprig of Fresh Mint
40g Shallot
Directions:
Slice the shallot, the mint, and remove stones from the cherries.
Roughly cut the pistachios.
Cook the Quinoa in 150ml of water, and leave for 15 minutes to cool.
Mix all the ingredients together to serve.
